Shopify's checkout is configured for EU VAT and the disclosures required for online selling. Anything specific to your licence or sector — I'll flag it for your accountant, not guess at it.
Some businesses should — if you want someone who can meet in person, a local shop is the right call. If you'd rather have one experienced person hands-on for less than a local agency's overhead, remote is worth considering. Your call either way, and I'll tell you honestly if I'm not the right fit.
