Jersey and Guernsey sit outside UK/EU VAT, which actually simplifies most Shopify setups. I'll configure the site correctly and point you to your accountant for anything specific to your structure.
Some businesses should — if you want someone who can meet in person, a local shop is the right call. If you'd rather have one experienced person hands-on for less than a local agency's overhead, remote is worth considering. Your call either way, and I'll tell you honestly if I'm not the right fit.
